Parsley, (Petroselinum crispum), hardy biennial herb of the carrot family (also called parsley family; Apiaceae), native to Mediterranean lands.

The leaves are used fresh or dried, their mildly aromatic flavour being popular with fish, meats, soups, sauces, and salads. Parsley is often the principal ingredient of bouquet garni and fines herbes.
